Dill Sour
Ingredients:
- • 30ml Cambridge Dry Gin
- • 25ml lemon juice
- • 20ml honey syrup
- • 25ml apple juice
- • Egg white
- • Fresh dill to garnish
- • Fresh flowers to garnish
Method:
- 1. Combine ingredients in a shaker, dry shake, then shake with ice.
- 2. Fine strain and serve over ice in tumbler.
- 3. Garnish with dill pollen, dill and fresh flowers.

Spring Solstice
Ingredients:
- • 25ml Old Curiosity Pink Elderflower & Jasmine Gin
- • 25ml Sauvignon Blanc
- • 5ml elderflower cordial
- • Fever-Tree Elderflower Tonic
- • Orange and rosemary to garnish
Method:
- 1. Shake all ingredients except tonic and pour into a Highball glass.
- 2. Top up with tonic and garnish with orange and rosemary.

Bee's Knees
Ingredients:
- • 50ml Bright Spirits Peels Gin
- • 25ml fresh lemon juice (strained – no bits or seeds)
- • 15ml honey and chamomile syrup
- • 1 egg white (optional)
Chamomile Syrup:
- • 1 part honey with 2 parts cold water and 2 teaspoons of dried chamomile
Method:
- 1. Mix the honey with cold water and dried chamomile before bringing to the boil. Muddle well to release the chamomile’s fragrance and leave to stand.
- 2. Drain using a fine mesh sieve and combine with all other ingredients into a cocktail shaker. Vigorously shake with plenty of ice.
- 3. Strain into a chilled coupe or Martini glass and gently garnish with chamomile flowers.

Dandelion and Burdock Cosmo Daisy
Ingredients:
- • 50ml Dandelion & Burdock Gin
- • 25ml freshly squeezed lemon juice
- • 10ml sugar syrup
- • 15ml Triple Sec
- • 2 raspberries
Method:
- 1. Shake ingredients over ice.
- 2. Double strain into a cocktail glass.
- 3. Garnish with dandelion flowers.

Bute 75
Ingredients:
- • 37.5ml Isle of Bute Gorse Gin
- • 25ml lemon juice
- • 12.5ml sugar syrup
- • 37.5ml Butterfly Pea Tea
- • Sparkling Wine
- • Lemon twist and butterfly pea tea flower to garnish
Method:
- 1. Shake up all ingredients apart from sparkling wine into a cocktail shaker filled with cubed ice.
- 2. Fine strain into a flute without ice.
- 3. Top up with sparkling wine and garnish with lemon twist and a butterfly pea tea flower.

A Rose Between Thorns
Ingredients:
- • 35ml Mother’s Ruin Rose Geranium and Fennel Gin
- • 12.5ml Fennel Liqueur
- • 25ml freshly squeezed lime juice
- • Small bottle of Fentiman’s Rose Lemonade
Method:
- 1. Shake the first three ingredients well with ice in a shaker to thoroughly mix and chill.
- 2. Strain into a glass and top with rose lemonade, stir very gently to combine.
- 3. Garnish with lime zest.

Rhubarb Rose
Ingredients:
- • 60ml Orkney Gin Company Rhubarb Old Tom
- • 20ml freshly squeezed orange juice
- • 25ml double cream
- • 5ml Grenadine
- • 1 egg white
- • Fentiman’s Rose Lemonade
- • Rose petals to garnish
Method:
- 1. Shake together ingredients (except Rose Lemonade), add ice and shake again.
- 2. Strain into a chilled tall glass.
- 3. Top up with Fentiman’s Rose Lemonade.
- 4. Garnish with rose petals.

The Raven Rose
Ingredients:
- • 50ml HRAFN Gin ‘Thought & Memory’ Limited Red Edition
- • 100ml dry vermouth
- • 10ml raspberry liqueur
- • 2 drops rose water
Method:
- 1. Half fill a mixing glass with cracked ice.
- 2. Add all ingredients and stir until chilled.
- 3. Strain into a Martini glass.
- 4. Garnish with a rose petal.

The Costa Rica
Ingredients:
- • 50ml Samara Gin
- • 100ml elderflower tonic
- • 15ml freshly squeezed lemon juice
- • 1 tbsp dried hibiscus
- • 15ml sugar syrup
Method:
- 1. Add the gin, lemon juice, sugar syrup and hibiscus and shake vigorously with ice.
- 2. Strain into a glass and top up with elderflower tonic.
- 3. Garnish with hibiscus.

Turkish Thunder
Ingredients:
- • 50ml Thunderflower Gin
- • 15ml fresh lemon juice
- • 10ml rose syrup
- • Prosecco
- • Rosemary
Method:
- 1. Shake the gin, lemon juice and rose syrup with ice in a cocktail shaker.
- 2. Strain into a Champagne flute or similar glass.
- 3. Top with Prosecco.
- 4. Add a sprig of rosemary to garnish.

Kintyre Rose
Ingredients:
- • 35ml Tarbert Legbiter Navy Strength Gin
- • 5ml rose syrup
- • Aromatic tonic
- • Rose petals to garnish
Method:
- 1. Shake the gin and rose syrup over ice.
- 2. Pour into a glass and top up with aromatic tonic.
- 3. Garnish with rose petals.

Shepherd's Delight
Ingredients:
- • 50ml Misty Isle Gin
- • 25ml Strawberry liqueur
- • 15ml elderflower cordial
- • Rose lemonade
Method:
- 1. Add the gin, strawberry liqueur and elderflower cordial to a cocktail shaker and shake.
- 2. Fill a Highball glass with crushed ice and pour the contents of the shaker over the ice and top up with rose lemonade.
- 3. Garnish with rose petals.
